Yummy Dipping Sauce

 Yummy Dipping Sauce


You like "Tots"?  Onion Rings?  French Fries?  Chicken Tenders?  I have a great sauce that you can use for all of these....


1/4 C plain non-fat Greek yogurt
2 Tbsp mayonnaise
1 Tbsp ketchup
1 Tbsp Dijon mustard
1/2 tsp garlic powder
1 tsp smoked paprika
s/p to taste

More recipe experimenting

Check out this recipe that is filling and filled with protein


Tried this Epicurious recipe for Red Wine-Braised Chicken with Chorizo and Chickpeas last night and it was a hit.  The best part is a small serving will fill you up easily, so no need for starchy sides with this dish.  This recipe will be a repeat in our house.  Definitely give it a try!!!!

More midweek-friendly meals


During the cold weather, like many of us out there, I crave comfort food.  I have been experimenting with my Mom's Meatloaf recipe.....not a super fancy food, but it was a staple for many of our family meals growing up.  I love her recipe but have struggled to adapt it to my new food lifestyle.  The hardest part was finding gluten free versions of Brown Gravy packets and bread crumbs that adds enough flavor but doesn't make the loaf exceptionally dry.  I have gone through several trials, but I think I have settled on the right balance of moisture and flavor that takes me back to helping prep dinner in the kitchen with Mom.  Give it a try!



I was also able to try a new dish that is perfect when you are scrambling to make something quick during the week that tastes good.  And, I found all the stuff I needed to make this in my kitchen already...so not a lot of pre-work required.  Definitely a keeper!  Thanks to getinmybelly.com for the recipe inspiration!

Two more recipes for your bag of tricks....the pork chops is great for a quick meal that only takes about 30 minutes to prepare....perfect for mid week.  The soup is fabulous for prepping ahead and will not only hold for several days but improves as it sits longer.  Two great options to try.  Enjoy!

Avoiding Soy isn't Soy Difficult

Soy is one of the trickier ingredients that I need to avoid.  When I was going to Japan a year and a half ago, I asking my doctor if soy and rice are safe for me (at the time, rice was out as well) and he said yes to rice but still no soy.  I remember thinking "ok...I will survive.  I can always have a bowl of rice."  But, after researching a little more, I started to get frustrated as they use soy sauce on absolutely everything there, they season their rice with wheat for flavor....OMG.  What did I get myself into by going to Japan for three weeks?  What saved me?  Coconut Aminos in my backpack.



I had never heard of coconut aminos before or anyone having to avoid soy in their diets either.  Look around, soy is in everything.  So I found this product coconut aminos by Coconut Secret.  I can't say it tastes exactly like soy sauce, but it is a nice substitute.  This company has a few products that work well for those of us with challenging food issues.

Last night I was experimenting with an oldie but goodie recipe that we used a lot at the restaurant.  It is a delicious sweet orange soy sauce that works well on chicken, pork or beef....so we used it a lot there.  Since the sauce is made with a 1:1 ratio of soy to orange juice and a lot of brown sugar, it is a little challenging to make a soy-less, no processed sugar version taste just like it, but never the less, I took on the challenge of recreating a Carrie-friendly version.

Right now, the Cara Cara oranges are in season and are super juicy and sweet.  I bought two of those and squeezed out the beautiful pink juice into a sauce pan.  I matched the volume with the Coconut Aminos Garlic Sauce.  I used the garlic version just to supplement with additional flavor.  I added a couple dashes of salt and I sliced some fresh ginger to the pot.  Finally, I added about 1 tablespoon of agave nectar and turned on the stove to reduce the sauce.  Throughout the reduction I added a bit more OJ and some more Coconut aminos.  Finally, the sauce thickened and started to bubble nicely, so I removed from the stove.  What I ended up with was a nice sweet soy-like syrupy sauce that I could drizzle on my meat and veggies!  Whoop Whoop!  Not the same, but still delicious.  Arguably the sauce may have been better than the original since there was more flavors in the mix with the ginger and garlic.  We paired my new sauce concoction with pork tenderloin cooked sous vide and a mix of veggies sautéed in peanut oil.  It was amazing!  I cannot wait to eat the leftovers.

I am very pleased to be able to mimic the recipes that I loved from the past.  It helps bring peace to my emotional ties to food as well as challenges me to think outside of the box with my cooking.  It is my cheap therapy!  If you would like to try this Orange Soy-less Stir Fry, check it out!

The 12 Days of Cookies

When I joined the training department at my company, I was able to wear regular clothes, makeup, jewelry, and inherited a captive audience for anything food related.  This couldn't have come at a better time for me as I was still adjusting to my gluten free lifestyle and still wanting to satisfy my love of cooking and baking.  So I decided to try the 12 days of cookies last year....Each day for 12 business days, I would bake different batch of cookies for the folks in our area to enjoy.  I used this opportunity to bake all the cookie recipes I practiced baking all the time as a kid, but also to travel down memory lane to relive fond memories in my kitchen baking with mom.  It was kind of therapy for me, as the winter holidays tend to be very sad for me since it was mom's favorite time.  It was something that I could feel good about during a time when I am exceptionally lonely.  I didn't know what to expect from my coworkers from this, but I did receive many different reactions to this odd gesture ranging from:

  • "Wow....that is so nice!"
  • "Why are you torturing us with all this temptation?"
  • "This is my favorite time of day!"
  • "Would you make ones with peanut butter? They're my favorite."
  • "Why don't you make something you can eat too?"
  • "Where's the cookie today?"--on the 13th day
  • "You should make cookies everyday!"

Actually, I found the comments fun and enjoyable.  All-in-all I thought everyone found a cookie in the bunch that they liked.

This year, I was wondering if I should repeat my efforts from last year.  Fully knowing, I was staying at home this holiday, I was looking for projects to keep me busy during the holidays.  Right before Thanksgiving I was approached by two folks in the area which solidified my decision to repeat the 12 days of Cookies this year.  Both folks, at completely different times and at completely unrelated times asked me "are you doing the cookies this year"- insert giddy little smile here.  I couldn't say no.  Honestly, I was glad my efforts the previous year were appreciated.  I think for me, it isn't about eating the cookies, or anything I make.  I feel I was put on this earth to create and watch others enjoy.  It is a bonus for me to be able to enjoy what I create as well....and one thing I have learned is that I can enjoy the foods I cannot eat anymore by the smell.  I know that isn't conventional, but since we taste mainly by smell anyways, I am enjoying 80% of everything I make anyways.  Again, more therapy for this broken foodie.

So this year, I wanted to give myself a project.  Last year, I focused on recipes I knew....I had made all of them before and knew what to expect from the dough, how long to cook them, and all the tricks to make them delicious.  This year, I didn't want a home-court advantage, so I embarked on a different challenge: to make cookies from recipes I had never made before.  This is risky since I cannot taste test them, but a good challenge for a baker to utilize the other senses to determine quality of their product.  I had fun scouring Pinterest for recipes with unusual cookie concoctions or recipe instructions.  

The result: A success!  Obviously there were some that were favored over others, but all in all, the cookies were enjoyed by lots of people.  I loved the looks on the folks that would get that giddy smile as I walked in with my green tupperware containers filled with freshly baked goodies.   I loved the folks that would lurk around the table as I set each batch out waiting for me to finish so they could grab a treat.  I loved walking by the table throughout the day to see how popular that day's cookie was with the folks in the area.  And, I loved the different methods of feedback from my taste testers: hugs, smiles, begging for me to make more, different rating systems (narwhales, thumbs up, food gasms)...all helping me fulfill that need I have to please others with my food.

Oh My! Chicken Pot Pie!

I get the strangest cravings since going gluten free.  The latest was chicken pot pie.  I can vividly remember the chicken pot pies mom would heat up for me on the nights I was at the gym late from gymnastics workout so that I could eat and do homework at the same time.  I have been craving that flaky buttery crust something fierce as of late.  So I decided to give it a whirl.  I picked up my America's Test Kitchen cookbook "How can it be Gluten Free?"  I had a lot of success with their flour  blend making buttery dinner rolls in the past, so I thought I would try the pie dough.  It was certainly easy to work with and simple to make.  I wanted to share it with my GF community because it is definitely a keeper.

I have used it twice now for Chicken Pot Pie and also an asparagus/sundried tomato quiche I concocted the other day.  Very yummy.  Give it a try!

First scoop of ice cream in 2 years

Today I had my first scoop of ice cream in 2 years.  I don't really crave sweets, but when it comes to ice cream, this is my one treat that I miss dearly.  Hubs encouraged me to make my own....gluten, soy, processed sugar, and corn free.  And it was really yummy!  Enjoy the recipe!  This is one happy girl...
