Creamy Chicken with Artichokes

Its artichoke season!  Our artichoke plant is finally producing and we have had the pleasure of enjoying two artichokes already this year.  One of my family's favorite recipes during the week was this creamy chicken with Artichoke recipe.  Even if it isn't springtime, you can enjoy this recipe with canned or frozen artichoke hearts and it tastes just as good.

Creamy Chicken with Artichokes

4 chicken breasts, boned, skinned, and cubed
1/4 C butter
4 oz can mushrooms, or six medium sized mushrooms sliced
1 tsp salt
pepper to taste
1 can artichoke hearts or 1 package frozen artichokes
1/3 C Sherry
1/3 C chicken broth
1 C Sour cream or greek yogurt


Brown chicken in butter until tender and browned.  Add everything else except the sour cream/greek yogurt.  Bring to a boil and simmer until reduced.  Turn off heat and allow to stand for 5 minutes.  Add sour cream/greek yogurt at the end before serving.

Serve with steamed veggies and rice.
