Creamy Lemon Garlic Chicken


This very flavorful dish may become your favorite mid-week meal.  It is super quick to make and is great when you don't have a lot of time but still want to cook to avoid ordering out.  Thanks again to getinmybelly.com for the recipe!




Creamy Lemon Garlic Chicken


2-3 medium chicken breasts, sliced horizontally
salt and pepper to taste
1/2 C flour (I used Better Batter gluten free flour mix)
1 Tbsp olive oil
2 Tbsp butter
3-4 cloves garlic, minced
splash of white wine
1 C chicken stock
1 C cream or half and half
juice of 1 lemon
chopped parsley and lemon slices for garnish


Season the sliced chicken with salt and pepper.  Drench in flour to fully coat.  In a large skillet over medium high heat, add oil and butter until hot.  Add chicken breasts and cook 3-5 minutes per side until golden.  Remove from pan and set aside.

Lower the heat and add the minced garlic to the pan and cook for 30 seconds or until fragrant.  Add the wine to deglaze the pan and scrape the bottom of the pan.  Add the stock to the pan and simmer for about one minute.  Add the cream/half n half and simmer for another 2-3 minutes or until creamy.

Return the chicken to the pan and sprinkle with lemon juice.  If needed, add salt and pepper to season.  Garnish with chopped parsley and lemon slice if desired.  Serve over rice and with steamed broccoli and carrots.
