Inspired by a dressing I tasted at a local restaurant, I wanted to recreate this goodie for changing it up at home. Funny thing is that I am not a cilantro fan. I have found that, in general, people have a love/hate relationship with cilantro, and I am usually falling on the side of the latter. However, this is a great dressing to change things up a bit that even tough critics of cilantro can enjoy.
Creamy Cilantro Lime Dressing
1 C loosely packed cilantro leaves (stems removed)
1/2 C plain Greek yogurt
2 cloves of minced garlic
2 Tbsp lime juice (approx. 1 lime)
1/8 tsp salt
1/4 C olive oil
In a food processor or blender, combine the cilantro, yogurt, garlic, lime juice, and salt. Blend until smooth. With the motor running, slowly drizzle olive oil through the feed tube. Chill at least 10 minutes to blend the flavors.
Enjoy on your favorite salad ingredients!
