Won Ton Meatballs

This recipe is great as an appetizer or an entree with rice and steamed veggies.  It has helped me enjoy chinese cuisine again!  Yay!  Thanks to Nom Nom Paleo for the recipe to adapt to my needs!




Won Ton Meatballs

5-6 med/large crimini mushrooms, chopped into small pieces
1 lb ground pork
1 lb ground chicken or turkey
2 scallions, finely chopped
1/4 C cilantro, chopped
1 Tbsp coconut aminos
1/2 tsp kosher salt
1/2 tsp fish sauce
1/4 tsp ground white pepper
1/4 tsp sesame oil
peanut or avocado oil
1 scallion, sliced on the bias for garnish
sriracha for garnish


Preheat the oven to 400 degrees F.  Add the mushrooms, meat, scallions, cilantro, coconut aminos, salt, pepper, fish sauce, and sesame oil into a large bowl.    Use your hands to squeeze and mix the meatball mixture into a sticky/tacky paste.  Form the mixture into 1 1/2 - 2 in balls using an ice-cream scoop or your hands.  Roll the portions into balls. and arrange onto a rimmed baking tray lined with parchment paper.  Bake the meatballs for 15-20 minutes or until done.  Serve immediately topped with Sriracha and scallions.
