After some experimenting with different techniques and ingredients, I have finally settled on the right formula that mimic's the comfort meal that I remember as a kid. But now, it is Carrie-friendly and is an easy midweek meal that takes minimal effort!
Mom's Meatloaf - Gluten free version
1 Tbsp of Gluten Free Brown Gravy Mix
1 tsp dried minced onion
2 eggs
1 Tbsp dried parsley
2 tsp coconut aminos
1 tsp kosher salt
1/2 tsp ground pepper
1 C gluten free bread crumbs (dried)
splash milk
1 - 1 1/2 # ground beef or turkey
Preheat oven to 350 degrees. Measure out the gluten free bread crumbs into a large mixing bowl. Splash in enough milk to allow the crumbs to soak up the liquid. Stir to coat with the milk. With the crumbs soaking up the liquid, add the Gluten Free Brown Gravy Mix, minced onion, parsley, coconut amines, salt and pepper. Stir with the crumbs. Add the two eggs and mix with the crumb mixture. Add the ground meat. Ditch the spoon and use your hands to incorporate the crumb mixture with the ground meat until it is uniformly mixed. Press into a loaf pan that has been greased and bake for 45-50 minutes. Slice and enjoy with some mashers and steamed veggies!
