Coconut Lime Chicken


My constant battle of loving dairy and hating it at the same time, I decided to try this recipe to see if coconut milk/cream can create the same mouth feel I crave.  It didn't disappoint.....Thanks to www.asaucykitchen.com for the recipe inspiration.


Coconut Lime Chicken

4 skinless, boneless chicken breasts
1/4 tsp salt
1/4 tsp pepper
1 Tbsp coconut oil
1/2 C shallot, diced
1 whole red chili chopped
1 C chicken stock
2 Tbsp lime juice
1 Tbsp chopped fresh cilantro
1/2 tsp red chili flakes
1/2 C full fat coconut milk or coconut cream
1 Tbsp arrowroot starch mixed with 1 Tbsp water

 
Melt the coconut oil in a large skillet over a medium high heat on the stove.  Add the chicken breasts and cook each side for 5-7 minutes or until browned on each side.  Remove the chicken from the skillet and set aside on a plate.  The chicken doesn't need to be fully cooked since you will return it to the heat soon.

Add the chopped onion to the same skillet and sauté for a few minutes to soften.  Add the chili pepper if you are using it.  Saute another couple of minutes.  Add the chicken stock, lime juice, cilantro, and chili flakes.  Bring the mixture to a boil and reduce to a simmer.  Let simmer for about 5 minutes.  Add arrowroot and water at this time.  Bring to a boil and reduce heat as the sauce starts to thicken.

Add the chicken back to the skillet, cover and let cook for another 5-10 minutes or until the chicken is cooked all the way through.  Serve and enjoy!
