Although I made this for dinner and it worked just fine, hubs and I agreed this would be fabulous for breakfast along side some eggs for a filling meal. Thanks to Primavera Kitchen for the recipe inspiration!
Ground Turkey Sweet Potato Skillet
2 Tbsp olive oil
1 lb ground turkey
1 tsp garlic clove, minced
1/2 C yellow onion, diced into small dice
1/2 C yellow bell pepper, diced
1/2 C red bell pepper, diced
1 1/2 sweet potato, peeled and diced
salt and pepper to taste
pinch of red pepper flakes
1/2 C shredded mozzarella cheese
fresh parsley for garnish
Preheat oven to 400 degrees F.
On the stove and in an iron cast skillet, heat the olive oil over medium high heat. Add the ground turkey and garlic. Break up the turkey while it cooks. Add onions and bell peppers a to the skillet and continue to cook until onions soften and pepper start to brown. Turn down the heat a little bit. Add the sweet potato, chili pepper, salt and pepper. Cover the skillet and cook until the sweet potatoes are tender making sure to stir occasionally and add more oil if necessary.
When the sweet potato is tender, turn heat off at the stove and add the shredded mozzarella cheese. Bring skillet to oven to melt the cheese. After melted, remove from oven and garnish with parsley and enjoy immediately.
