Chicken and Wild Rice Casserole


Nice easy recipe for mid-week.  Only 30 minutes to prep and cook and then enjoy!  Check it out for something simple and delicious...Thanks to Better Homes and Gardens for the recipe inspiration.


Chicken and Wild Rice Casserole

6 oz wild rice, cooked
1 medium onion chopped (~1/2 C)
2 Tbsp unsalted butter
1/2 C sour cream
1/3 C dry white wine
2 Tbsp snipped fresh basil
2 C shredded or cubed chicken, cooked
1/3 shredded parmesan cheese


Instructions:
Preheat oven to 350 degrees.  In a large skillet, cook onion and celery in hot butter over medium heat until tender.  Stir in soup, sour cream, wine and basil.  Stir in cooked rice and chicken.  

Transfer mixture to an ungreased 2 quart baking dish.  Sprinkle with cheese.  Bake, uncovered, for about 35 minutes or until heated through.
