Mom's Spinach Salad

This spinach salad is the recipe that turned me onto fresh spinach.  My experience with spinach as a kit was microwaved frozen spinach in a bowl with water.  I couldn't stand the stench it left in the kitchen.  The idea of eating fresh spinach wasn't high on the priority list.  But once I tasted this salad, I never turned back.  Give it a try...its easy and very tasty.

Mom's Spinach Salad

Dressing:
1 C oil of choice (I use olive oil)
5 Tbsp red wine vinegar
4 Tbsp sour cream or greek yogurt
1 tsp salt
1/2 tsp dry mustard
1 Tbsp sugar (we use coconut sugar, agave syrup, honey, or maple syrup at my house)
ground pepper
2 Tbsp parsley, finely chopped
2 cloves fresh garlic, minced

Salad:
3 bunches fresh spinach, washed and cut into bite-sized pieces
3 hard boiled eggs, chopped into small pieces
8 slices of bacon, chopped into small pieces, cooked


Mix all dressing ingredients together and let refrigerate for 6 + hours.  Toss salad ingredients together and add dressing as desired.  Enjoy!
