Mashed Sweet Potatoes

If you can have dairy, skip the coconut milk and use regular milk instead.  I have done this with almond milk as well and it works too.


Mashed Sweet Potatoes


3 medium sweet potatoes, rinsed 
2-3 Tbsp coconut butter 
coconut milk, approx 3/4 cup
Sea Salt, finely ground to taste
Ground black pepper to taste



In a large stockpot, add whole sweet potatoes and cover with water.  Boil sweet potatoes until soft and there is no resistance when a knife is inserted into the fattest part.  Drain water and return potatoes to hot pot.  Add 2 T of coconut butter and a splash of coconut milk.  Start mashing potatoes.  Add sea salt and pepper and add another splash of coconut milk.  Mash potatoes a little more.  Taste.  Adjust seasonings as necessary and add a little more butter and milk as necessary.  When texture is correct, scoop the potatoes out and serve.
