Gluten Free Broccoli Casserole with Chicken, Rice and Cheese

Gluten Free Broccoli Casserole with Chicken, Rice, and Cheese

Ingredients:
1 Tbsp olive oil
1 red bell pepper, diced small
1 small yellow onion, diced small
4 oz chèvre (goat cheese) allowed to come to room temperature
1 1/2 C mozzarella, shredded
2 C broccoli florets
1 1/2 lb chicken breasts, cooked and cubed
8 oz cooked rice (your choice of brown or white)
1 oz parmesan, shredded


Directions: 
Preheat oven to 375 degrees F.  Heat large, non-stick skillet.  Add olive oil to med-hot pan.  Add onion and bell pepper and broccoli.  Saute for about 5 minutes.  Add the softened goat cheese and turn down the heat to med-low.  Stir until the cheese softens and coats the vegetables.  Remove pan from heat.  

Add mozzarella, chicken, and cooked rice to the pan and stir well to combine.  Add the mixture to a rectangular baking dish that has been sprayed with cooking spray.  Sprinkle the mixture with parmesan cheese.  Bake at 375 for 10 minutes and serve hot.
