Gluten Free Granola


Let me preface this with the fact that this recipe contains no "wheat gluten."  Obviously, if you cannot have any grains, then stay away, but if oats are ok in your repertoire, then this formula works to customize granola to your liking.  I will give you the formula and then an example of my favorite combination of ingredients to make a tasty breakfast option.

Formula:

4 C Gluten free oats (I use Bob's Red Mill Gluten free oats)
1 C raw nuts / seeds
1 C raw coconut, or more oats or nuts or seeds
1 1/2 t flavor (ex. vanilla extract, almond extract)
1 T favorite spice (ex. cinnamon, pumpkin spice, cardamom)
1/2 C chopped dried fruit (ex. raisins, dried cranberries)
1 pinch kosher or celtic sea salt
1/4 C fat (ex. coconut oil, melted butter, canola oil)
1/4 C sweet (ex. honey, agave syrup, maple syrup)


Carrie's version:

5 C Gluten free oats
1/2 C chopped roasted, salted almonds
1/2 C chopped macadamia nuts
1 1/2 t vanilla extract
2 t cinnamon
1/2 t cloves
1 t nutmeg
1/2 C dried cranberries
1/2 C raisins
1 pinch kosher or celtic sea salt
1/4 C coconut oil
1/4 C agave syrup

Whatever your combination here are the preparation instructions:

1. Combine wet and dry ingredients in a large bowl
2. Spread granola out in a thin layer on a baking tray sprayed with vegetable spray or oiled 
3. Bake at 350 degrees F until golden.  Make sure to check on granola halfway through the cooking time to stir on pan and rotate the pan in the oven.
4. Allow to cool and enjoy!
