Tater Tot Casserole

 What is it about Tater Tots that bring you closer to home?  So comforting!  Not sure what makes this dish addictive like crack, but I will go with it.  Delicious!


Tater Tot Casserole



Cream of Chicken Soup Substitute (in a small saucepan):

**make first** 

3 Tbsp butter
1 1/2 Tbsp gluten free flour of choice
1 Tbsp small diced shallot
2 packages of chicken bouillon
1 1/2 C almond milk

Combine the flour and butter and fry for two minutes.  Add the shallot, chicken bouillon, and the almond milk.  Whisk until the mixture comes to a boil.  Turn down and simmer for three minutes and then remove from heat.  Set aside.


Casserole Ingredients:

1 Tbsp olive oil
1-2lbs ground beef, browned (or try with Italian sausage instead)
1 shallot, minced
1 tsp granulated garlic
s/p to taste
3 scallions, sliced
8 oz sour cream
2 C cheddar cheese, shredded
28 oz bag frozen tater tots


Instructions:
1. Preheat oven to 350-degrees and grease a 9 x 13" casserole dish

2. Add the olive oil to a skillet over medium heat.  Add the minced shallot and cook until translucent.

3. Add the ground beef and cook until done. Using a slotted spoon, scoop out beef and onions and place into a large bowl for mixing.  Drain any excess fat/grease.

4. To the bowl, add s/p, granulated garlic, scallions, sour cream, cheese, and cream of chicken soup.  Give it all a good stir and thin out with almond milk if needed.

5. Pour ground beef mixture into greased casserole dish and spread to the edges.

6. Top with the entire bag of tater tots.

7. Bake for approximately 45-50 minutes or until the tater tots are golden brown.
